My summer salad is a big hit when I bring it summer picnics or a get together BBQ. It's refreshingly minty cool taste with feta and balsamic.

Ingredients

  • 1 Watermelon Cubed (Depending the size of your party)

  • 3 OZ Strawberries Sliced

  • 1/2 Cup Crumbled Feta Cheese

  • 1 English Cucumber Sliced Thin

  • 1 Tbls Mint Leaves Shredded

  • 1/2 of a Lime

  • 2 TSP Balsamic Vinaigrette (optional drizzled)

Directions

  • Slice the watermelon and take the core and slice it up into cubes.
  • Slice the strawberries not too thin or too thick.
  • Thinly slice the cucumbers.
  • Put the fruit and sliced cucumbers in the fridge for 2 hours.
  • Sprinkle Feta Cheese.
  • Add the shredded mint leaves.
  • Squeeze lime juice into salad.
  • Mix up the salad.
  • Be sure to serve within an hour so the salad doesn't get watered down.
